I'm a little obsessed with garnishes right now, I even bought a kit! Imagine how excited I was when I ran across something special and tasty to do with my fresh carrots from the Portland Farmer's Market! This is my prep for a super simple, but truly lovely garnish.

I used a veggie peeler on my carrots. It looks like they used a mandoline in this video, their petals are a bit thicker.

So this is my finished dinner. Panko crusted salmon with butter lettuce salad and carrot roses!
