A Restaurant with Zero Garbage? [VIDEO]

So I know that yesterday was Earth Day but I came across this video and had to share it because I think it's pretty amazing. Imagine a restaurant with 'zero waste.'

According to the video, the average restaurant produces 8 gallons of waste per HOUR. It took this particular restaurant 2 years to do that and the garbage that they did have was picked up by an artist to make a sculpture. I think more restaurants, heck everyone can take a lesson here.
